Pilav – Hurem Sultan

Basic ingredients:

2 water glasses  of rice

4 cups of  beef or chicken soup

25 grams of butter or oil

1 onion

2 pieces of chicken breasts

1 cup of almonds

1 water glass cup of peas

1 teaspoon of black pepper

1 teaspoon of strong spices (allspice)

1 teaspoon of turmeric

saffron

salt

For moistening  the rice:

2 cups of boiling water

salt

½ lemon

Preparation:

After you wash the rice, place it in warm water with salt and lemon for 40 minutes. Than boil the peas in another pot.  Peel the onion and cut it in long, but thin pieces. The chicken breasts are also chopped into thin strips. The butter or the oil (depends on what you use) is melted into the pot of rice. Then in the pan you add the thin slices of chicken breast and onions. They are continuously boiled for ten minutes and mixed with wooden spoon. Then you add the rice, which was previously put in warm water. The water from it should be well pressed out. Leave them together to simmer. Add some strong spices, salt, black pepper, saffron and turmeric, and let it boil for another 4-5 minutes. Then add four cups of beef or chicken soup. The previously boiled peas are also put in the rice. In the  first five minutes cook it on medium heat, then cook it on low temperature until the water is absorbed. Once you cook the rice, cover it with paper towel (napkin) and wait for 10-15 minutes. The almonds are placed in boiling water and they are cooked for few minutes. Once you take them out wait for a minute and then peel of the skin of the almonds. The almonds are baked in a pan, then added in the rice and mixed with a wooden spoon. The prepared pilav is served hot.
